Mmmmmmonday! ~ Refrigerator Oatmeal Recipe
Posted: January 14, 2013 Filed under: Uncategorized 1 Comment »I am by no means a morning person. Any effort to make or put food in my mouth before 10:00 AM is far too much effort. My plan is to make easy, healthy breakfast foods that can be consumed with little effort and prepared ahead of time so that I have no reason to not eat in the morning.
First up, is refrigerator oatmeal. There are a million recipes for this online, and here is mine.
Refrigerator Oatmeal
1/3 cup oats
1 TBS Chia Seeds
1/2 cup milk of your choice
1/2 cup Greek yogurt Plain
1/2 cup frozen or fresh fruit
1 TBS unsweetened coconut flakes
1 TBS chopped nuts
2 TBS Maple syrup
Put all ingredients in a pint jar and shake or stir to combine. Put in refrigerator overnight. Grab jar on your way out the door. Breakfast is already made!
You can make two batches in one evening as this will keep for two days in the fridge.

I should note that this is a big breakfast. My three year old daughter and I share this most days. You can also halve or leave out the Maple syrup if sweets aren’t your thing.
